This weekend I had some time on my hands; so I decided to make a nice healthy snack for the upcoming week. As I searched Pintrest; I came across Chamomile Ginger Lemon Raw Energy Bars, and to my surprise; I had everything in the house; I could not pass it up. I had a whole mason jar full of dried chamomile that my mother-in-law gave me at the end of last summer; and there is just so much tea you can make; so I was excited to use some in my snacks. Of course; I got my camera out. I try to never miss any opportunity to get some good food photography practice in. The sun was out and it was coming right through my nice big bay window; so the natural light was plenty.
I adapted this recipe from One Green Planet.
Chamomile Ginger Lemon Raw Energy Bars
½ cup cashews
½ cup walnuts
1 cup dried dates
¼ cup dried apricots
2 tablespoons whole flaxseed
2 tablespoons dried chamomile flowers
1 tablespoon freshly grated ginger
Juice of ½ lemon
2 teaspoons of pure vanilla extract
Place nuts, dried fruit, and flaxseeds into a food processor and blend until chopped up and combined. Add in rest of ingredients until thoroughly fused.
Form into whatever shapes that you prefer.
