Food for Thought Friday's is finally here! This is my first food blog in 2014 and I'm sorry I've waited so long to post one. It's been a busy beginning of the year (especially when this is the "quiet" season for photographers). I am so grateful for the sessions I've had this year so far, and that's why my food photography was put on the back burner---but I am hoping to get at least two a month up on the blog!
The first installment of Food for Thought Friday is Red Velvet Cupcakes with Cream Cheese Frosting. This was the first time I've ever made red velvet and I'm not sure I'll ever make them again, to be honest, they were not my favorite. I had a great time making them and decorating them and of course photographing them, but they were not my favorite tasting cupcake I've ever made.
With today being Valentine's Day, I thought this was the perfect recipe to feature! I hope you and your love ones have a fabulous day filled with love and laughter.

Whenever I bake I always set out all my ingredients. I need to triple check because there have been times when I was just about to finish mixing something up, and realize I don't have a specific ingredient.
I mixed the dry ingredients and the wet ones; and then mixed up the coco and food coloring (Tip: make sure you have the liquid food coloring; I tried with the gel and it just did not work...needless to say, I had to run to the food store to get a bottle of red liquid food coloring)
I than mixed it all together and came out with this lovely hue of red! It pretty much will stain anything you touch so keep it in the bowl at all times! HAHA!
Once the cupcakes were cooled, I mixed together the cream cheese frosting and started piping the cupcakes. This is my favorite part! I love the variety of tips I have that can create all sorts of wonderful frosting decorations.
Next up were the sugar sheets and sparkles! Attention to detail is what I am all about so I made sure to make the decorations look nice and professional. I sprinkled just a few nonpareils on the cupcakes and added a heart sugar sheet!
And that's it! They are done and ready to be served and shared!
