It’s the middle of the summer and it’s been hot! It’s also peak peach season so I thought I’d make a nice refreshing treat for those hot summer nights! These Chunky Peach Popsicles are such a healthy treat to have after a long day at work or a long weekend out in the garden. The peaches were picked just a few weeks ago (A Day in the Peach Orchard) and the lemon verbena came right from our herb garden. If you have some peaches lying around; I suggest you whip up a batch of these frozen little delights. If you want to put a different twist to them; try adding some mint or basil to change the flavor a bit!
What you’ll need to make these are kitchen staples:
1 ¼ pound of ripe peaches, halved and pitted
Juice of one lemon
¼ cup freshly squeezed orange juice (if not orange juice add more lemon juice)
¼ cup sugar
¼ teaspoon of vanilla
Bunch of herb of choice
Coarsely chop peaches in a food processor. Transfer on e cup of the chunky peaches to a medium bowl. Add lemon juice, orange juice, herbs and sugar to taste to the food processor. Puree until smooth. Add to the bowl with the chunky peaches and stir in vanilla.
Divide the mixture amount twelve 2-ounce or eight 3-ounce freezer-pop molds (or small paper cups). Freeze until beginning to set, about an hour. Insert popsicle sticks and freeze until completely firm; about 1-2 hours more.
You can store them in the freezer for up a month in zip-lock bags (if they last that long!!!)
