Last week I posted a blog on Peach Popsicles and mentioned I had some more peach ideas for the height of summer. These are just some tasty ideas for you to try while using seasonal fruit bought at your local farmers market (or in my case handpicked at Alstede’s Farm in Chester, NJ).
Grilled Peaches…a great side dish to a light, grilled dinner or a delicious dessert to enjoy on a Sunday evening with a glass of dry white wine. All I did was cut the peach in half and lay flat on a grill. Grill for about 2-3 minutes or until grill marks appear. I added a dollop of Vanilla Greek Yogurt and then drizzled locally sourced honey over it; topping it with a sprig of mint. You can use vanilla ice cream and cinnamon or vanilla ice cream and a splash of bourbon. The options are endless when it comes to grilled peaches.
Since I picked these peaches a few weeks ago…they were starting to get soft and I did not want to waste any of them. So what do you do with super ripe fruit---you freeze it for future use. All I did was slice the peaches and lay them on parchment paper lined baking tins and popped them into the freezer until they were frozen throughout. Now we have pounds of peaches for smoothies; pies; and margaritas…
Which brings me to my last peach recipe! My husband and I like to make homemade margaritas pretty often and we use all natural ingredients. All you will need is a peeled lemon, a peeled lime, less than ¼ cup of sweetener (raw sugar, honey, or agave will work), tequila and a fruit of your choice. This can work with berries; mangos; pineapple….the list goes on. We throw it all into the Vitamix and blend it up. You may need to add a little water in if you’re working with frozen fruit and ice if you’d like it to be a frozen cocktail. Once again; ideas are endless when working with all natural, fresh fruit!
