So the other day; I signed onto Facebook and saw that a friend had posted a recipe on my page suggesting I might like it since it was a nice and healthy cookie recipe. Not only was it healthy; it was vegan with no added sugar. I am not a full time vegan but I do love cooking/baking with no added sugar/butter/oil/eggs. Much to my surprise; this recipe was one of the easiest cookies I have ever made. I surprised my co-workers with the cookies the day after I made them and they all enjoyed them.
These cookies would be great for breakfast or for a pre/post workout. There are minimal; real food ingredients in them. You can even make them Gluten Free with Gluten Free Oats. You can also add other ingredients to them; dried blueberries; dried apricots; cacao nibs; nuts or raisins. The options are endless!
Of course; I took this baking opportunity to practice my food photography! I love that fact that food photography never jumps around; never talks back and I never have to make silly faces at it to smile…it’s always very corporative!!
Ingredients for Vegan Banana Oat Cookies:
- 3 Mashed Banana’s (ripe)
- 1/3 Cup Apple Sauce (I made my own-simmered 3 chopped apples and cinnamon until soft-made about 1 cup)
- 2 Cups Oats
- 1/4 cup Soy Milk
- 1/2 cup Dried Cranberries
- 1 tsp Vanilla
- 1 tsp Cinnamon
Mix all ingredients together; roll into balls and place on parchment lined cookie sheets. Please cookies down just a bit with the bottom of a glass- cook for 15-20 at 350 degrees. Let cool before moving to a wire rack.
